Baking

So I was invited to my first cookie exchange last week!  I am super excited but I have a 2 year olds birthday cake to bake and decorate tomorrow and Saturday.  So, I've got to squeeze in 3 dozen cookies somewhere. I do believe I am going simple and quick with Peanut Butter Cookies.  They can bake while the cakes cool. Here are the cookies I wanted to make.

They are mexican wedding cake cookies and are so yummy.  I just don't really have the time for them and I don't have ANY nuts. :( 

 1/2 cup powdered sugar
1 cup butter, softened
2 teaspoons vanilla
2 cups all-pupose flour
1 cup finely chopped pecans
1/4 teaspoon salt
powdered sugar

Pre-heat oven to 325 F. In a large bowl combine 1/2 cup powdered sugar, butter and vanilla. Blend well. Stir in flour, nuts and salt until dough holds together. Shape into 1-inch balls. Place inch apart on ungreased cookie sheets. Bake for 15-20 minutes until set but not brown. Immediately remove from cookie sheets. Cool slightly and roll in powdered sugar. Cool completely and reroll in powdered sugar.

So I'm making these instead.  :)

Peanut Butter M&M Cookies
 Ingredients:
2 ½ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
½ cup butter
½ cup vegetable shortening
1 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs (beaten)
1 teaspoon vanilla extract
1 cup M&M’s (optional)

Cooking Instructions:
Step 1: Pre-heat the oven to 350 degrees. Sift together flour, baking soda, and baking powder in a bowl. Beat butter, shortening, and peanut butter until smooth. Add white sugar and brown sugar and beat until smooth.
Step 2: Add the eggs on at a time and then add vanilla extract until blended. Use your hands or a spoon and add the flour mixture to complete cookie dough.
Step 3: One at time scoop dough with a teaspoon (can use a tablespoon for larger cookies) and drop dough in 1” balls onto a cookie sheet. Place 2 inches apart. With a fork dipped in flour flatten cookies. Then flatten in the opposite direction (so they cross).
Step 4: Bake in the oven for 9-10 minutes for chewy cookies or 11-12 for crispy.
